Savvy shopper recipes

Here's one that I learned to make in S. America while there a couple of years ago---all ingredients were purchased at dramatic discounts with couponing! It's called Pastel de Choclo.

Combine in blender/food processor:
2 cans of creamed corn
2 cans of drained whole kernel corn
a yummy amount of basil--fresh if possible
1 egg

Cook:
approx 1/2 lb of ground beef/turkey
approx 1/2-1 lb of chicken, cut into chunks
onions, if desired
olives, if desired

Boil:
3 eggs

Put meat mixture in 9x9 pan. Slice hard boiled eggs and scatter on top of meat. Pour corn mixture on top and sprinkle w/ a little sugar.

Put in 425 degree oven for about 30 minutes, until corn is golden brown.

Thank you! We are always looking to expand our menu options at our house!

One passed to me from another savvy member was Easy Stromboli which can be found at the Pillsbury website. It uses the refrigerated pizza crust which we can often get really cheaply or free during triples or great sales events. You can make it with your own special variations on the insides as to your preference but it is good and easy and was a hit even with my kids.
