slow cooker buffalo chicken sandwiches

Now that we're all stocked up on wing sauce and chicken (thanks harris teeter!), I thought I'd share this recipe -- it is one of my husband's all time favorites. Left overs make a great buffalo chicken pizza, too!

Ingredients:
1-2 lbs chicken breasts
1 bottle wing sauce
1/2 packet ranch dressing mix (I've used regular ranch for this too -- maybe 1/4 cup or so)
2 tbsp butter
Hoagie rolls or hamburger buns

Directions:
Mix 3/4 bottle of wing sauce with the ranch dressing mix. Place chicken breasts in your slow cooker, and cover with wing sauce/ranch mix. Cook on low for 5-7 hours. When cooked, pull apart with forks. Mix shredded chicken with butter and remaining sauce, waiting until the butter has melted before serving. Serve on rolls, topping with blue cheese or ranch dressing (if desired), or top with shredded lettuce.

Thats it! Super easy, and way better than getting a buffalo chicken sandwich at KFC. If you don't have wing sauce, or want to avoid the HFCS that alot of the commercial sauces have, you can sub hot sauce (tabasco, franks red hot, texas pete etc) mixed with melted butter.

This sounds yummy! Can you give an example of brands of wing sauce? I'm not familiar with that product, and I don't want to use anything too spicy, like the Tabasco or other hot sauces. Thanks!

I like Texas Pete wing sauce, as well as Budweiser wing sauce (the mild one -- the hot one is too much!). Both are pretty cheap, and the Budweiser was cheap last week during super doubles (BOGO + $1/2) so thats what we used this time. You can usually find them in the same aisle as barbecue sauces and hot sauce.

The original Buffalo wing sauce was made from half hot sauce and half butter, which is easy enough to do at home. To make it milder, you could probably use more butter and less hot sauce.

My husband tops his with provalone cheese to cut the heat back a little bit -- dairy is really good at neutralizing hot peppers!
