Spinach pie recipe!

It was even more delicious on the second day!!

UPDATED: I used only 1/2 the amount of spinach and added some fresh garlic, I don't recommend using 4 lbs of spinach...no way, she probably meant for small packages of chopped frozen spinach.

Directly from a real Greek kitchen: It's amazing, if you love the real thing it's worth the effort!! The woman who shared this with me is not a young and has had years of practice perfecting this!!(fyi: pd = lb (pound)

1 pd feta
4 pds spinach(fresh or frozen)
2 large onions
1 bunch scallions
1 bunch parsley
1 bunch thyme
4 eggs
1 container(1/2 pd cottage cheese)
salt & pepper
1 box filo dough/sheets
2 sticks butter

Preparation:
grate onions & scallions and saute in 5 tbs oil
cut thyme & parsley in small pieces and mix together with onions and
scallions in the saute
Put frozen or uncooked spinach in a mixing bowl and mix in the onions,
scallions, thyme & parsley
Break apart feta and mix together with cottage cheese in a seperate bowl
along with the eggs
Then mix in to that bowl everything else(spinach mix)
In a small pot melt 2 sticks of butter(which will be spread onto filo with a
brush)
In a large pan layer the filo sheets one by one with (brush each piece with
butter)up to about 8 layers(there should be 16 sheets per box, so divide in
half)
Put spinach mixture in between the 8 sheets of filo then top with the other
half of filo sheets(brush each piece with butter again) *the entire pie
should be 1 inch to 1 1/4 inch in thickness*
When finished brush top layer again with butter
Cut into desired sliced squares(ex. 2in x 2in)
Mix one egg with 1/3 cup of milk and beat into a mixture
Using that mixture brush onto top of pie *this is the last step after you
finished brushing with butter and already cut into slices*
Put oven on 350 degrees and bake for approx. 1 - 1 1/2 hours time
